Two Secret Recipes For Effortless Meal Creation

Everyone knows eating healthy is the only way to go.
The problem is, that sometimes time constraints get in the way of making meals at home. Usually this results in just giving in to temptation for something quick and easy.
I’m going to have you consider that when you’re in a time crunch, sitting in the drive-through or ordering from your favorite restaurant will take as long, if not longer than creating either one of these HEALTHY recipes on your own.

Kale & Bacon Salad
2 cups kale leaves (finely chopped)
3 Tbsp Balsamic Vinegar
1 cup broccoli and kale slaw (Trader Joe’s has a great one)
1 Tbsp Paleo Mayonnaise (Primal Kitchen Avocado Oil is our favorite)
1 Avocado (sliced/diced)
1 package nitrate-free bacon
3-4 Tbs sunflower seeds
Bake bacon in oven at 400 degrees for 20 minutes. Set aside to cool, then chop bacon.
Add kale and broccoli/kale slaw to a mixing bowl. Pour balsamic vinegar over and mix and massage for 2 minutes until kale is slightly softened.
Toss in the mayo, bacon and sunflower seeds and combine.
Top with avocado slices. (Dr. Daniel always adds blueberries to add a little sweet to the saltiness of the bacon, he swears by it. Heather, not so much!)

Grain Free Cookie Dough
I grew up eating raw cookie dough as my go-to sweet treat! I still eat it, although now I’ve made a few changes to the ingredients I eat. This is a healthier version that hits the spot every time we make it. Surprisingly it actually tastes very similar, and in my opinion much better. DISCLAIMER: You don’t bake this one, it’s meant to be eaten raw.
1/2 cup packed almond flour
1/4 cup tapioca flour
5 tablespoons cold unsalted grass-fed butter
2-3 teaspoons raw honey to taste (we typically do 2)
3/4 teaspoon vanilla
1 ounce chopped dark 85% chocolate or chocolate chips
Generous pinch of sea salt
Combine all ingredients (except chocolate) in a blender or food processor and blend until smooth consistency.
Stir in the chocolate and serve.
That’s it. Simple.
